Waldorf Salad

Serves 4 people

3 apples (red, green, or yellow)
3 tablespoons lemon juice
1 cup diced celery
1/2 cup coarsely chopped walnuts (can be lightly toasted)
1/2 cup mayonnaise
1 tablespoon poppy seeds
Leaves of butter or iceberg lettuce (washed)

Dice the apples. Sprinkle with lemon juice and mix for an even coating.

Add remaining ingredients (except lettuce), and blend gently.

Serve on lettuce leaves.
