3 apples (red, green, or yellow) 3 tablespoons lemon juice 1 cup diced celery 1/2 cup coarsely chopped walnuts (can be lightly toasted) 1/2 cup mayonnaise 1 tablespoon poppy seeds Leaves of butter or iceberg lettuce (washed) |

Dice the apples. Sprinkle with lemon juice and mix for an even coating.
Add remaining ingredients (except lettuce), and blend gently.
Serve on lettuce leaves.
