Italian Delight

Casserole

Serves 8 people

3 onion, medium, chopped
2 green bell pepper, chopped
2 cloves garlic, mashed

1˝ pounds ground beef

4 cups shell macaroni, cooked
16 oz tomato sauce, canned
15-oz corn, whole, canned
15-oz corn, creamed, canned
˝ tsp. salt
˝ tsp. black pepper, freshly ground
12-oz olives, black, whole, pitted
2 cups cheddar cheese, medium or sharp, shredded (first)

1 cup cheddar cheese, medium or sharp, shredded (second)

Sauté the onion, bell pepper and garlic in a little butter just until the onion is transparent. Transfer to a well buttered large baking pan(s).

Brown the ground beef until cooked through, remove the grease, then add to the baking pan(s).

Add the cooked shell macaroni, tomato sauce, whole kernel and creamed corn, black olives and the first cheddar cheese. Toss to evenly distribute all ingredients.

Bake at 350° for 30 to 40 minutes, or until well heated through. Remove from the oven, distribute the second shredded cheese over the top and return to the oven to melt the cheese, about 10 to 15 minutes additional.

Serve hot with French &/or garlic bread.
