Apple Crisp

Serves: 6 people

Fruit:
1 quart peeled, cored and pared Gravestein
        and/or Granny Smith apples
1/2 cup sugar
1/8 teaspoons salt
Juice of 1 lemon
1 teaspoon lemon zest
2 tablespoons apple brandy

Crisp Topping:
3/4 cup flour
1/4 teaspoon salt
1/2 cup rolled oats
1 teaspoon cinnamon
1/2 teaspoon dried ginger
1/4 cup firmly packed light brown sugar
1/2 cup unsalted butter; cold and cut in pieces

Mix together apples, lemon juice, zest and apple brandy. Place in an 8" square-baking dish.

Using an electric mixer at slow speed blend sugar, butter, oats, cinnamon and ginger until well mixed and crumbly. Scatter evenly on top of apples. Bake at 350 degrees F. for 1 hour.

Serve warm with whipped cream or vanilla bean ice cream.
